Overflow Jugs

This picture shows the overflow jugs with the strainer and funnel inside one jug. The excess juice from the pressing is stored in the overflow jugs. It is gradually added to the barrels to maintain a proper level of juice in the barrel. Once fermentation ceases in the wooden barrels the juice from the overflow jugs is added to the barrels a final time to eliminate as much air as possible. The air adversely affects the wine.
